What the wine maker says..The fruit for The Hungry Ground is exclusively handpicked and then rapidly transferredto the winery where it is destemmed without crushing. Small stainless-steelfermenters are used due to the limited quantities; to maintain adequate heat they arewarmed when necessary. The wine is allowed up to a week of extended maceration onskins after dryness. It is then is transferred to French oak barriques, of which 30 – 50%is new, with the remainder 1 to 2 years old. Malolatic fermentation occurs in barrel. The final blend is carefully assembled with only the best barrels included.Region: 100% Adelaide HillsVariety: 100% Cabernet SauvignonColour: Deep CrimsonBouquet: Heady fragrance of violets mixed with plums, cassis and spice withherbaceous notes and a hint of earthy complexity.Palate: The palate is full yet tight with notes of berries and spice and a flourish ofchocolate.
