Fruit beers crafted at the tiny Melbourn Bros', All Saints Brewery, Stamford, Lincolnshire, are fermented spontaneously by naturally occurring wild-yeasts resident within the fabric of the ancient building. Whole fresh fruit is added to the fermenting beer; maturation is slow and unhurried, the beer being left to develop in character for at least one full year before blending with additional pure fruit juice. The result is a beer of outstanding quality in which the complex nature of the spontaneous ale interacts perfectly with the refreshing flavour and aroma of fresh fruit.
