Hi Spirits : The Beers : Belgian Beers : Trappist Ales
Based on an original recipe of brother Thomas, from Westmalle, the monks of ACHEL decided to start brewing their beers. Brother Antoine from Rochefort has also helped to elaborate the right recipe.
The champagne-cork closure allows this deep rich ale to mature over time, gaining a complexity that the 33cl bottling never attains.
One of the best beers in the world, this deep, rich ale has a powerful nose of dried fruit and hints of spice, a complex rounded palate, and a long evolving finish with hints of port and dark berry fruit.
Wonderful pale, peachy ale, with plenty of hop dryness to keep the alcohol in check. The finish is spicy, with a hint of mouthwatering acidity, and very moreish.

Chimay's 'standard' house ale, but don't be fooled, this is far from ordinary. A wonderful coppery ale, with hints of redcurrant fruit and a soft malty palate, and hints of hop dryness in the finish.

The Abbey of Orval is located near Florenville, Belgium in the provence of Luxembourg. A beautiful amber-red ale, with a large head that lasts well. Nose is complex - dark fruit and woody notes. Dried fruit flavours - raisin, date, and spices. Sherryish finish.
Soft and rich, with hints of dried fruit and Christmas pudding. Long finish, carrying its weight very well.
